How do I record a sail to tweak polars?

What is the process for recording a sail to try and get more accurate polars? I've recently been tasked with learning expedition on an older classic cruiser/racer that doesn't have easily accessible polars. I've got a starting point from a sail maker, but it'll likely need to be refined with some real-world data.

I'm still tryig to figure out how to get live data from the boat's Raymarine Axiom to the computer, but assuming I can, what's the process to record our sails in various conditions to get more accurate data? Thank you!

Thank you. I just finished his ebook "Expedition Navigation, a Gentle Introduction" but don't remember any section covering how to record live logs, and then compare that data to current polars and make adjustments, hence my question. Appreciate the help!
