Log file contents? (contemplating purchase)

Can't find answer in manual as it says to look at a log file which I don't yet have... 

Will normal logging store position, depth, time, water temp,  boat speed, heading, COG, SOG, rate and set as well as TWA, TWS ? 

As such it should be useful to extract updated bathymetry and observed winds and to play them back against GRIB to assess goodness of forecasts.

Normal logging will capture that information and a lot more.  You could definitely extract that information and use it for a number of purposes.  See the extract view below that shows how you can identify log fields and extract them to a spreadsheet or CSV file.
