As your main objective is to display Expedition (NMEA) channels, why not use Ventus Pro on your tablet?

John, you say that it is implemented.  But in the Exp 10.7.6 channel settings I still see separate damping for set and drift.   How does it work?

whan using a "shared" location of your Exp data files for 2 PC's (like a USB drive), don't forget that each PC will need its own Exp license file.  So when you swap PC's you need to ensure the proper license file is available to the PC.

Afaik, the dotted part of the optimum route is where you need to tack/gybe and get max vmg (should align with the TWA in between brackets in the route)

You can set a stripchart wand on the track in Exp at the point you crossed the finish.   Then in stripchart you can identify at what time that happened.   If needed you could trim the log file to only show recorded data up until finish time.

Your Connectify network should be in another subnet then the subnet you use for the H5000-Exp connection.

I use a wired connection between my PC running Exp and my NKE instruments.  PC has a fixed IP address. Then I run Connectify Hotspot on the PC but with a different subnet mask than the PC uses to connect to NKE.   Works like a charm!

As Nick explained you need to open both log files in Excel.
Edit:  replace the "boat number" from the second log file from "0" to e.g. "1".

Then copy/past the rows of the second log file underneath the rows of the first log file.   Then sort this combined worksheet on the "UTC" column "oldest to newest".   This ensures that the logging rows of the 2 boats are sorted on time (this is very important as Exp needs all rows in the logfile in "oldest to newest" order).
Then save this file as .csv again.   

Now you have a single log file that contains the data of the two boats.  This logfile you can open in stripchart and then you are able for each variable that you want to display to identify if you want it for boat 0 or boat 1 etc.
Now I think about it:  likely if you open this logfile in Exp (on the Tools menu) it will also display the two tracks of both boats? (I cannot try that now as I dont have Exp at hand).

Afaik you can only display 1 track.
However, in stripchart you can indicate for which boat you want to see each variable for which you display a chart.  So you can e.g. make a chart displaying TWA for boat 0 and TWA for boat 1.  When you then set wands you can compare the two TWA's.
